After a long hiatus, pretzels are back as a tasty snack to enjoy with your favourite Old Flame brew! In celebration of their return, check out this recipe for an IPA mustard featuring our West Coast IPA, Perry Loved Mary. This spicy mustard is the perfect topping for a toasted pretzel, as a spread on a stacked sandwich or even with Hank’s Pastries’ speciality sausage rolls! This recipe yields a fairly large batch, so be sure to scale it down to your desired serving.
Perry Loved Mary IPA Spicy Mustard
5 cups dry mustard powder
2 cups light brown sugar
2 teaspoons chili powder
2 teaspoons curry powder
2 teaspoons salt
½ cup prepared horseradish
3 355ml cans of Perry Loved Mary IPA
1 cup cider vinegar
1 cup extra virgin olive oil
2 teaspoons lemon juice
- Combine the mustard powder, brown sugar, chili powder, curry powder and salt in a mixing bowl with whisk to incorporate.
- Slowly whisk in the horseradish, Perry Loved Mary IPA, cider vinegar, olive oil and lemon juice until smooth and fully incorporated.
- Transfer the mustard mixture to a saucepan and slowly bring to a boil over medium heat to prevent foaming Simmer the mustard, stirring occasionally, until slightly thickened, 20 to 30 minutes. Cool the mustard at room temperature for about 3 hours.
- Transfer the mustard to a holding jar or container. Adjust the consistency if needed with water or a combination of Perry Loved Mary IPA and water.
