Shelly's Beer & Flour Tortilla Recipe

Happy Cinco de Mayo! One of our incredible taproom staff shared her recipe to create beer tortillas to celebrate the day with good food, good brews and good tunes! See below for the recipe and photos to follow along:
Shelly's Beer & Flour Tortillas
Makes 12 x8" tortillas
1/2 cup of melted butter 
3 cups flour
1 tsp baking powder
1 tsp salt
1 cup of Old Flame Blonde Lager
Make sure you have a very cute assistant nearby 
Directions:
In a bowl, mix dry ingredients 
Add melted butter until stir until crumbly with a wooden spoon or your hand, gloves help to keep the dough from sticking to you! 
Make a well/depression, pour in the Old Flame Blonde Lager. Don't forget to taste test!
Fold the dry into the well with a wooden spoon but don't overmix. Scraping up dry flour from the bottom of the bowl until a shaggy ball forms.
Use your hands at this point and squeeze it together incorporating the loose flour mixture into a log. It should be quite moist. You can form the log in the bowl still, or on your counter/mat.
Make sure your very cute assistant hasn't fallen asleep!! 
Divide your log into 12 equal sized balls. Each ball will form about an 8" tortilla. 
A silpat and a French bamboo rolling pin is recommended because nothing sticks. You won't lose any dough.
If you don't have a silpat, roll out the rolls between two pieces of parchment or two pieces of saran wrap but this is harder. Take each ball, put it on your silpat(or between parchment paper) and roll it out as thin as possible. When you pull them off the silpat they retract. 
If you use a nonstick pan or cast iron there is no need to grease the pan.
Place tortillas on a preheated pan over high heat, about 4-5 mins for first side when you see some bubbles forming, and then a couple minutes on second side. You can have a peak underneath them. 
They are done when they are golden brown! 
SHELLY TIP: If you would like to make them to use in enchiladas, burritos, or chimichangas you will want to undercook them because they will continue to coke when baking them with desired ingredients 
Note: This recipe doubles and triples easily.
